Why do people keep asking this question? Isn't it clear the OP has a Beta deck, not a Digi Beta deck?
 
I think the problem is also not being addressed at all. Color captures show up monochrome inside MC? Nothing about component, composite, or whatever could explain that. What codec is this being captured to? Try another codec, or try another version of MC. This sounds like a software bug or a codec issue.

Anyway: why digitize a BetaSP off an BetaSP-deck? Older and current digiBeta should be able to read and output via SDI.

How is the Betacam deck connected?  There is no SDI on a betacam.  Are you feeding component into the LHi?.  If it's component it sounds like the card is only getting the Y of the Y, R-Y, B-Y signals.  There is also betacam component vs. regular component if memory serves me.  That had more to do with levels IIRC.  Perhaps there are settings in the aja control panel or the cabling is incorrect.  I would think you could feed the LHi straight composite by setting the control panel.  I haven't been on an aja box/card in a while.  If I had to guess I'd say the card was being fed composite but the control panel was set up for component of some sort.

Customer is running a recent  version of Media Composer 2018.14 on a new Dell Precision 7920 tower with AJA Kona LHi.
 
Works fine with SDI.
 
When connected to a Betacam deck it does the following:
- SD 525i ingest displays in Avid as black and white (although the underlying file is in color and exports correctly)
- 1080i upconvert was the workaround before, now it displays a mishmash of video garbage
 
SDI feeds of both to a monitor (from the Kona BOB) look fine.
 
I am bringing in a reference generator and a standalone component to SDI converter to troubleshoot but curious if anyone has seen/solved before.
