Could you get geeky on this and elaborate as to how shooting Log creates this issue? Is it a by product of the reduction of actual detail to avoid clipping when shooting log that when stretched back out leads to greater level steps between values? Obviously 8 bit has greater steps, that can lead to banding, than 10 bit but I've always felt the stretching out of the log signal adds noise, although I can't say I see the noise in normal video.

Yes thats a quantising issue on the chroma.
Shooting Log can cause this in 8bit recording systems. Its one of the trade offs.
