My understanding is that Deskstar are meant to be used as PC drives and not typically 24/7 RAID use drives. These normally have 2-3 year warranty and have lower MTBF (Mean time between failures).  Ultrastar are Enterprise class drives desighned to operate 24/7 and have advanced error detection for use in RAID arrays. They also typically have 5 year warranty and a higher MTBF.

What is the difference between Deskstars and Ultrastars?  I have used a lot of 4TB Ultrastars over the past 3-4 years with no problems.
