To recreate a single 5.1 track from six discrete mono tracks, the general idea is to just set the pan on each track to the appropriate corner of the surround pan field.  However, for LFE there is a trick.  You need to issue the "audioextras" console command and check "Allow LFE-only tracks".  With that set, in the audio mixer, left-click on the LFE track and check "LFE-Only".  the panner will disappear, and the track will now play directly to the LFE channel.

Having made sure you set the pan on all clips in all five of the other tracks, (there's a menu item for that), you can mix down your six tracks into a single 5.1 track.

Of course, you have to have your project mix mode set to 5.1 surround. (Top left corner of audio mixer.)

Your LFE-Only track attribute will survive sharing bins with other MC users that haven't set the audioextra bit, but it won't survive AAF or a trip into Pro Tools.  The resulting mix down track, of course, will survive, as it's new media.
