I think one key factor is professional users of kit aren't that interested in shopping around for all the low cost parts to build a system under the cost of supplier direct. It opens the door to future issues and a complicated resolution path.
Unlike Apple I can supply a fully loaded HP system T a reasonable price. Not as cheap as buying a bare bones crate and filling it with individually sourced low cost extras but not enough more to make it worth the trouble.
HP have a crate self configuration site for their workstations and the add on costs are reasonable. Unlike Apple.
And the end of the day its the ease of supply, reliability and knowledge that the system can be supported.
But a 2019 MacPro and based on previous experience can you be sure Apple will continue to support and upgrade that type of crate? Or will the 2025 MacPro be a matchbox sized unit.
