I'm referencing the Denon DN500av (although mine is its predecessor, A7100). It is a pre-processor with 7.1 (or 5.1) balanced XLR outputs. You can input HMDI (or analog 5.1 or 7.1 audio, via RCA), and it will control the output to the XLR's. If you go BOB-HDMI-Denon-XLR-Speakers, that would be a pretty neat setup.
Otherwise, find a consumer model receiver with 5.1 or 7.1 outputs. Most of those will be unbalanced RCA, and the ones that have XLR outs are usually quite a bit more expensive than Denon's DN500av.
