The Mac edition is the same as the PC version except for native Mac EFI
support (similar to BIOS), allowing the Mac computer to access the GPU
before the OS level. Almost any modern NVidia PC GPU will work on the
Mac with prior mentioned EFI caveat. The great thing about the GTX680 is
it has the processing power of the K5000 at consumer pricing.

The CS6 Mercury Playback Engine "hack" is not really a hack. It is just
manipulation of an internal text list of approved GPU. You just add your
GPU to the MPE list. You do the same thing for Avid's ACPL GPU qualified
list.

The PSU of the 5,1 Mac Pro is 980 watts if I am not mistaken. That
should be sufficient. I don't understand why the GTX680 power demand
would be more than what the computer can handle considering it has 2
dedicated GPU 16x slots. 2 GPUs on a Mac should be more than the 190
watts demand of single GTX680 Mac Edition.

Yes EVGA is the only company.
