You can't adjust the data rate with Pro Res (or Avid DNX, for that matter)
2.5 hours of SD is a pretty tall order to get under 5 GB with an editable
codec. Even DV would be over 30GB. If you are editing with Premiere or
FCPX, H264 will work.
