A default of half best is all you need for HD resolution finishing and MC can't output higher than that.
Even half good is suitable for most work.
Each step up in de-beyer quality roughly doubles the processing time. So an half good setting can be 4 times faster than a full de-beyer.
And no media creation settings even when copied into your site settings are still classed as project settings. So new projects will adopt your site settings but current or imported projects will retain their own media settings. This has been a "feature request" for fixing for a long time and another legacy issue.
