I haven't really gone through the whole list, but I definitely think you can make a pretty simple and effective kludge for the first request.
Create two different editing or effects workspaces that are virtually identical except that one is linked to one grid setting and the other is linked to another.
Name the workspaces and the Grid settings the same thing. Link the workspace to a setting.
Map the workspaces to any buttons that you want.
Now, the only thing you have to do to switch grid settings is simply tap the workspace button for one or the other.
I just tried this and it works perfectly. One caveat I discovered: CAPITALIZATION MATTERS when linking names to settings.
