I'd think that you'd want your hands to lay on the editing surface in approximately the same way they do when you're sitting. So the ideal height would be close to the height from the ground to your elbows when you are standing.
Anthro Cart has adjustable edit desks. I was considering one of those... the big ones are pricey. I don't have any connection to them, but when I just checked their website, the current special happens to be 40% off these exact types of desks! $1,700 - $3,000.
Makes the cinder block idea look pretty good.
