It's option-overwrite (option+red edit). It works exactly as you say: the track you select on the record side is overwritten starting at your mark. All other tracks that are selected on the source side are overwritten at the end of the sequence.
It may seem more complicated on paper than it actually is. In practice, I find it very intuitive when building a sequence, and simpler than using an audio mark. Depending on which track you select, it creates an audio or video prelap.
