[Avid-L2] Are new Mac's that ship with Catalina downgradeble to Mojave or High Sierra?

After seven years I think it's time for a hardware upgrade. Problems is a lot of my software will not migrate to Catalina. Does anyone know if any of the following is possible?

Reformat the system drive and install an older OS?
Boot from an external drive running an older OS
Use Bootcamp and run windows10 for some of the legacy software I use?

I know eventually Media Composer will catch up. But I also use Adobe CS6 apps a lot and don't want to be forced over to a cloud subscription. Same with my ancient 2008 MS Office
