CCC would be my first choice, too.
You could also try FreeFileSync, which will show you want it wants to copy before it does so, which might work better if you know there are certain files/directories that you just don't need. I find FreeFileSync sometimes has trouble with very long filenames/pathnames (on Mac) which don't seem to trouble CCC.

sooo… is there copy/backup software that 'picks up where it left off' like good upload software? obviously the OSx copy function is useless. I tried CCC, and it has a pretty good record of what's copied - also goes in alphabetical order, so not TOO hard to figure out - but, can you suggest something better?
