You can usually select USB sources if you disable the video hardware (with the little gear icon on the timeline window). I don't know why it is unavailable when the hardware is active, though.

Mic to USB is the most logical option. I've feature requested the option to select USB for audio dor ages. But it doesn't seem to be the helpful things that get implemented...
