I have been told that direct out in Version 8 Avid will generate multi mono discrete tracks instead of interleaved but I haven't tested that yet myself.  I'm still relying heavily on QT reference outputs to maintain the proper audio stems as I find with mixed frame rate sequences Avid requires that audio mixdown be checked when exporting a QT Ref which eliminates the possibility of multiple mono stems

With Videotoolshed's QT Map you can even remap the track assignments in a different order.  It is awesome.

If nothing else Steve you could set up the tracks in your sequence where you want them and export a QT Ref and then do a save as in QT Pro.  If you have mixed frame rate then make an audio only sequence and export that as a QT reference and then edit it back into the video QT reference and you can maintain your stem choices.  Then save as and you have a self contained with the desired audio configuration.

Odd. I just looked in MC 8.2.6 and Direct Out is there but grayed out.  
I'. pretty sure I used it a few weeks ago when I was working in Symphony
