I just tell people I play with jig saw puzzles all day. They seem to acctept that.

It's hard educate, differentiate and promote a creative service (editing) that is completely invisible to the vast majority of those who consume it.  As an art form, we (editors) are largely charged with providing viewers with a version of what their eyes, ears and brains would do, if they were in an environment.  Of course, with dramatic content, we also very intentionally manipulate the viewer's perception to elicit certain responses.  

Telling a group of people you just met at a party that you are an editor is akin to telling them you are a rocket scientist -- they are maybe impressed that you work in the industry -- but they have no idea what you actually do -- and they typically don't have the attention span to hear about, or understand, the details.

For the most part, the only people that really have the visual aptitude to recognize good or bad editing -- are in the business.  And one could further argue that the ones who really understand good and bad editing are a significantly reduced subset of that demographic.
