In answer to your question, yes it plays QTs just fine with no audio stuttering. LogMeIn does have a quality setting for audio, but in my case it didn't seem to make any difference. The picture settings concern color quality and resolution. My color quality is set in the middle (there's no numerical value assigned). Obviously if the quality is higher, so is the data rate. I'm test playing a QT on the MBP (OK,GO's 'I Won't Let You Down') that consists of H.264 video and aac audio (1920x1080 video with stereo music at 44.1KHz). QT Player is reporting a data rate of 3.52Mbps. I have a fast internet connection which may explain why my results are so good. While the audio is perfect (it's even heard on the MacPro speakers in stereo), the picture appears on the MP screen at about 10fps. Despite this, there is no blockiness in the frames I do see. If I change the LogMeIn resolution, I get more fps, but I could never get full 30fps with my quick test. It might be possible to satisfactorily see full frame rate video if you were OK with a small-sized window for viewing.
It might be hard to edit using a low frame rate, but in my tests it's pretty good for reviewing edited material. If I were to operate Avid over LogMeIn, I'd also expect a bit of latency working with the mouse and cursor. But once you get used to it, it might be acceptable.
