First unlink the master clips you want to modify
To unlink master clips from their current links: 
1. Select the master clips to unlink. 
2. Depending on your operating system, do the following: 
- (Windows) Ctrl+Shift+Right-click the clips and select Unlink. 
- (Macintosh) Using a multi-button mouse: Press and hold Cmd+Shift and Right-click the clips and select Unlink, or select Clip > Unlink from the main menu
- (Macintosh) Using a standard mouse: Press and hold Cmd+Ctrl+Shift and click the clips and select Unlink, or select Clip > Unlink from the main menu.
The clips are unlinked and display the message Media Offline 
Then use the modify command to remove the tracks you don't want.
With master clips selected, right click and select the Modify command.
In the modify command, select Set Tracks.  Uncheck the tracks you want to delete.
Relink master clips.
Your Master clips now only refer to the video and audio tracks you left selected in the Set Tracks box.

Consolidate or Transcode media.
At that point you have Master Clips that link only to the tracks you wanted.  In the case of DNXhd media, the separate audio tracks are still in your media folder.  If you want to get rid of the audio tracks, either consolidate to a new volume (old tracks will not be copied over.) or select reveal file to locate the linked tracks, and you should see in the same place in the media folder, the files for the additional audio tracks not being used.  Delete them.

If the Master clips are AMA linked, you can now transcode, and only the tracks in the modified Master clip will be transcoded.  This is also an excellent method for removing blank or unwanted tracks in deliveries that contain too many audio tracks to allow loading into the source monitor.

I would delete at least 5-6. Right now, we're working with Sony F55 media and I get rid of tracks A3-A8 and D.  We have the Mix on A1 and the shotgun on A2.  We always keep cam audio on there for syncing purposes just in case the mix drops out (which it does at least once per shoot week).

Dealing (offlining) with a show that has 6 channels of audio on the main cam that is radio mikes on 1 and 2 (useable) and cam mike on 3 and 4 (never used) and as far as I can see  duplicates on 5 and 6. Have to sync up gopro footage (provided by the facility (wav files). I like to delete audio I don't use, and I don't like to work with more than 12 channels of audio overall.
 
Is there really any reason to keep these other channels of audio?
