Shotput pro is a good choice for offloading.  It will also give you a printable report verifying the copy and will offload multiple cards at once.
The Sony SxS card readers are limited to USB3 i think but Sonnet make faster card readers that attach by PCIe and they also do a thunderbolt adapter too.

I recall that with an adapter there was a way to use cheaper cards than the SxS cards in the EX camera that would handle everything but overcranked footage.  Is that approach viable in a run and gun setting?
