Ken, if you don't need to use the extra screens for graphic intensive work, matrox and OTher world computer have USB Display port solutions to do this:

Also, you should be able to use generic PC video cards. you won't get the boot menus, but they should work once it boots. Apple seems to support many generic pc cards in the latest version of OS X.
