Welcome back. I can partially answer your question, with it *should* work. I freelance at a shop with 5 Mac clients on a CommandSoft FibreJet-controlled SAN. We are running MacPros via fibre channel, but one was recently replace with a new iMac. They are running with a Thunderbolt-to-FC adapter. I think it's the ATTO one.
I'm the only one running MC there, as we have typically been using FCP 7 with a little bit of Smoke, FCP X and Premiere Pro. Since the FiberJet software sets the SAN up as a volume-based configuration with defined read-write permissions, there has been no problem running MC in this fashion. Only one user at a time can "write into" any given Avid MediaFiles folder. Naturally you don't get collaborative Avid-style project sharing (Unity, ISIS, etc.), but individual stations can work with the SAN volume for the Avid MediaFiles folders and/or link to media on the SAN via AMA. Projects are stored locally.
I have not tested this with the iMac, though, so while it *should* work, I have no direct experience, yet.
