I say:

All I can offer is to say that this happens with PC Symphs alone as
well. I've opened projects I had created in other edit rooms and
found that the fonts are different from what I'd originally chosen in
the first edit room. The only common thread I've found seems to be
that there may be a relationship between the two Symphs' number of
fonts. That is, if there are not the exact same number of fonts (not
just the same fonts themselves), the second Symphony 'chooses' another
nearby font in the list. It's almost like the way a font is chosen is
not by its name but rather how far down the list of fonts it appears.
If the original Symph's font was #43 in its list of fonts, the second
Symph will pick #43 also. But that may not be the same font. If that
font is not the same, the second Symph picks whatever IS #43. This is
all just guessing by observation on my part. And I can't even confirm
that it is accurate.
