The Sony EX cameras have three 1/2-inch sensors. The Canon 7D has a single with about an inch diagonal. The Canon 5D has a single sensor with about a 1.7-inch diagonal. That's a really rough guide (and bogus description), but the key point: the Canons have single much-bigger sensors. More info and a couple charts:

You can use a Letus or similar adapter to fit SLR or film lenses on an EX1 or EX3. Depending on the adaptor, you may gain the shallow DOF, but you may lose a stop or two and end up with a longer and sorta awkward rig. I don't really see people using such adaptors with EX cameras anymore.

Ya, DSLRs can be better in low light than an EX camera.
