Hi Ben,
I deal with Macs the same way you describe (with a separate boot up disk) and find that the easiest for me.
I build each system as a disk image - then have to customize IP addresses at each station.
I know others (not in the Avid world necessarily) use a tool called Munki.

It is overkill for me - but maybe it would work in your situation.
