I also add:
No need (for the OP) to disparage iPod and/or iTunes because of the inherent terribleness of MP3. Both iPod and iTunes work well with uncompressed AIFF and WAV. This is how I've constructed my entire library. iTunes then is a convenient player and organizer of those files, and I can very easily move them on and off of my iPod.
FLAC is not supported (alas) but the very nice and easy to use XLD takes care of the conversion to uncompressed, preserving tags and instantly importing to iTunes.
