Thanks all for the feedback on this.

Yes, what I am trying to do is "link aggregation"... I called it multipathing, since sometimes that terminology is used when connecting fiber JBODs with multiple links.

As a number of people have pointed out, you can create a virtual network interface in the networking system preferences which is an aggregate of your two gigabit network ports.
I've done this, but so far it doesn't work (although I have a "connected" status". I think I just need to play around a bit with the IP addresses / Gateway / etc.

Thanks all for pointing me in the right direction with this.

p.s.
As a number of people have pointed out, crossover cables are no longer neccesary with almost all modern networking gear including the ports on the macpros, which are "auto-sensing".
