Update:
Found the manual uninstall instructions for the Mac (the previously posted link was for PC MC)

They're a bit old, listing things that don't exist, or at least weren't on my system, but I deleted what I could find.
Apparently there are no Mac patch installers, only full installers. Everyone probably knows this but me.
Pulled the dongle, did the update, rebooted, plugged the dongle back in, launched MC, agreed to use the dongle to activate the software, and one suite is now running 5.5.3!
