I disagree. We focus attention on specific areas, thereby editing what we take in. We do this both visually and aurally.
Every editor has heard things recorded in audio that no one was hearing on the set. Is that because it wasn't there? No, it is because we tune out sounds we aren't interested in. Like that damn A/C hum.
If you want to compare how we edit in reality, to how we edit as editors, think about watching a play. Are you constantly watching the entire set and getting everything that is going on everywhere? No, you selectively look at different parts of the stage. This can be governed by audio (actor speaking up) or lighting (spotlight hits an actor) or even motion.
BTW: We don't get a headache watching the play as we aren't trying to trick the brain like 3D does.
