Hi John,
For the format presets which also include a Sorenson 360 publishing options you can click the > arrow next to them which drops down the audio and video codecs as well as any publishing options which are part of the preset. Then you can highlight the 360 publishing option and delete it. Once the publishing option is deleted you can apply the preset to your videos and you will not get an error message asking for your 360 account information.
