Rob,

You're going to receive as many opinions on this as there are members of this community. To put it another way, "One man's ceiling is another man's floor". There is no "right" answer to your question. Only you can know the level of attention, detail, and creative difficulty involved in your production. You're budgeting one, maybe two days for editing. There are many people here who spend 6-10 weeks on a single half hour show. Some documentary projects take even longer.
