They're relatively low bandwidth compared with the actual signal - source and record monitors don't have to be full quality to be effective.

(once upon a time Avid considered a 160 x 120 pixel 4 bit (16 gray) to be acceptable. That was Media Composer 1 and 20 years ago, but still... :)
