Do you mean the Canon EOS 5D Mark II? There are plenty of workflow tips all over the web. Michael Phillips and Bouke just recently discussed a few Avid-related tips here on the L2 a couple of weeks ago. I forget the thread, but check back through the messages. I'll post a detailed blog entry in about a week. More FCP-centric, but I cover Avid, too.
As a DIT, what are your responsibilities? This doesn't make a lot of sense to me. There's little you can do to set up the cameras. Basically all you can do is copy cards to drives. Are you being asked to do more than this? Like do ingest/conversion? Sync double-system sound?
