I've been disappointed in the cylinder (trashcan) mac Pros. The price to performance ratio has seemed way off, and I've had to take 40% of ours back to the store for new motherboards/graphics cards. (at least that was under warranty and free).

I'm not convinced that Apple is going to do much with them though. I'm worried that they will go the way of the Xserve. (rest in peace)
If I were in your current position, I'd wait until Apple's developer conference keynote (June 13) and see if they announce anything then. Maybe they will update the CPUs?
Based on that info, I'd weigh the price to performance of the MacPro with a maxxed out iMac.
You'll be able to run your thunderbolt items off of an iMac, and will have saved a bunch of money. You'll have only 2 thunderbolt ports instead of 6, but you only have those two items now anyways ;).
If you wanted more power than you could get from the iMac - I'd then consider looking at a Windows setup.
However, I think for Avid use the iMac works pretty well.
That's my opinion on a rainy Friday afternoon.
