yes, you can change the time on the server.
This is not going to affect stamps that are already in place, but only newly created media.
Recommended procedure is to do it with all clients disconnected(either shut down or with all workspaces unmounted)

I am working in a facility with an older Unity, but I don't know the
system specs. All of the Avid computers have the wrong time on their
clocks, and it is the same wrong time on the Unity server. Can I simply
correct the time on the Unity server? I don't want to mess up any of the
