I don't know about the 7D -- but I would doubt the encoder part of the 5D was ever designed to be "flashed" with an alternate codec -- or that the data bus was designed for anything but that existing bitstream.
I don't know much about the HDMI out, as I'm not the shooter, just thought the product was interesting.
