Correct. This is what happens. You then have to upgrade the nVidia drivers. Apple always reverts to the OS X driver after significant updates. If you are using the nVidia web drivers to keep up to date, the updater will then inform you that there is an update to the drivers, if one is available. It usually only takes a few minutes for the updated to catch up, if there is a new version. In one case recently it took a few days for nVidia to release a new driver.
This has happened several times in the past few months. Apple has released several updates for Sierra that required an nVidia update.
If you are manually installing individual nVidia drivers, I suggest you get the web driver package to monitor updates instead.
Or just use the OS X driver. It works fine. I've always kept my nVidia drivers running when possible, but I've never noticed a difference when forced to run the Apple drivers.
