I get whatcher sayin', ;)
but the bezier handles are supposed to work like they do in Photoshop, wherein when you click and hold the mouse button, and then move the mouse, you get a bezier curve/handles; and if you simply click you get a corner point.
My issue is that even though I click and hold on a point as I draw, it still makes a corner point (though it does work as expected for the first click, as in the video). It's just not the advertised behavior, and I'm trying to suss out whether this is a known bug, or if there is something that's changed and I'm missing the secret handshake.

You are running up against the fact that Avid assumes you ant hard corners since you are use that specific tool which is designed to make straight lines between points.
