I have yet to hear of a single specific example of a program which is upset
by having the TabletPC service disabled.

Sounds like an urban myth to me.
I too have it disabled and have done for a long time. It's standard advice
for any DS installation and I have yet to hear of a single specific example
of a program which is upset by it.
