Try out the free Control Panel App RestoreMeNot http://www.restoremenot.info/ it will let you selectively turn off restore for the apps you don't want.
I also loved Spaces, but it is mostly back in Lion, and my old settings still work (each app goes to different windows in Motion control), though the finder does not work the same (can't seem to get the same finder for all Mission Control windows).
Personally I hate having to validate any changes to the Utilities folder and not being able to change it's permissions and having the User/Library folder hidden by default!
