"Boot volume" is now plural under these new OSes with APFS. At a lower level, you get the regular volume, and the "- Data" volume.
I gave up on CCC years ago in favor of "SuperDuper!". I just finished an internal SSD upgrade on a Mac Cylinder and copying bootable APFS images around with "SuperDuper!" was trivial, even between drives of different sizes. It knows all about this dual volume thing and re-creates it on the target drive.
