Unless you use the nit range over 100 then your HDR won't look that different to SDR. 

An HDR 800 Nit TV looks like SDR for content under 100 nits. 

And yes 5.1 can be immersive but only if the content is designed to be immersive. 

I have clients needing 5.1 for a head to head interview. 

The issue is we aren't using these new developments to improve the story telling. We are just using them for the sake of it.
