That makes sense. But there must be a way to do the same thing without the hassle.

This has worked for me in the past.
Disconnect the second monitor entirely. Reboot and force your system on to a single primary monitor. Check all the settings in the NVidia control panel. If there's time, do a clean re install of your NVidia drivers.
All good. Now shut down. Connect the second monitor. Start up. See if that does the trick.
