Sequence audio settings are hard coded when you create a sequence BUT you can create a new sequence and copy/paste across.
Mono/standard/multichannel tracks are pretty powerful but when you live by the sword...
There's some clever stuff that goes on with AAFs of sequences with 'standard' tracks that have mono and stereo clips in them - ends up splitting them into a mono track and a stereo track. With OMF I think it just makes it all mono.
Suffice to say that it is the Wild West of incompatibility, lacking the years of pain we went through with Avid / ProTools (and pain others still go through when going to Fairlight or whatever).
As for expecting anything to produce an interchangeable EDL ... You are in dreamland
