Today I found a small booth bottom floor of South hall in the middle not far from the escalators.
X-Keys (xkeys.com)
They make customizable button pads and panels. Some of it looks like lego for buttons. The Panels hook up through USB and they have software that can burn key functions into the buttons like an asci keyboard and they also have interface software that allows for mapping the keys to various functions that can be application specific. It seemed a little PC centric but I was told they also have mac support software that a 3rd party has written. There are various shapes and sizes and they even have XYZ joysticks. The joystick I saw was a little small for my taste but I've wanted to find a joystick that I could use building effects in Avid. I don't think the Avid architecture would support this joystick but I'm not a programmer so who knows. Maybe it would work on other pieces of software.
