In Textedit, you might need to go to Textedit>Preferences and set new file types to Plain Text rather than Rich Text.

Discovered one big problem I had was using the default TextEdit.app on the Mac. I switched to the free but robust TextWrangler and my text copy/paste issues went away. Thank god.
