I answer:

You would need either Avid hardware or Avid-approved 3rd-party hardware to output 5.1 or 7.1 audio.  The drivers for that hardware will activate those setting choices and will output 5.1 or 7.1 audio.  Your computer's HDMI output is not compliant with Avid audio output.  But you can play movies because your movie-playing software is intended to work with your computer's HDMI output.
So to answer your question again, you need Avid hardware or 3rd-party Avid-approved hardware and the installed software drivers for that hardware.
