You can tell a Mac to boot 32 or 64 bit, if it has capability to boot 64 bit.  The early Mac Pros had the ability to run 64 bit programs, but could only EFI (bios) boot 32 bit drivers for things like the video card.  The crucial issue for programs like AVID is that they need to access that hardware (e.g. video card) with 64 bit drivers.

An easy way to determine if a machine can do 64 bit on boot up is if it will run higher than Mac OSX 10.7.  64 bit EFI (bios) is required to boot into Mountain Lion or higher (10.8-10.10).  I have alway loved the program MacTracker, which is available on IOS or MacOS X.  It is free, and available online or in the app store for IOS and MacOS.  In addition to correlating detailed info on specification, it tells what OS the system will run.

Trying to get some clarification on 64 bit functionality in MacPros.  My experience is the first MacPros to handle 64 bit were the 3.1s.  What is the deal about booting in 32 bit kernel and still running 64 bit apps?  I seem to recall asking about this before but I'm trying to brush up on the specifics.  I know at work my MacPro 3.1 will run Avid 6.0 so it has to have the 64 bit compatibility to some degree.  I looked at another 3.1 MacPro at work and in system info it said 32 bit or 32 bit kernel.  I'm being told on our new san demo these computers aren't running 64 bit but I want to get specific about this.  Is system info the proper place to get the full picture?
