So your best option might be:
Computer Video Card DVI Output --->
Gefen DVI Splitter --->
Client Plasma and VO Booth Monitor
... and using DVI cables for all connectivity (assuming that cable type works for you).
Just make sure your Client Plasma and VO Booth monitors are running at the same resolution -- which I have to assume is 1920 x 1080.
