Ben,
I think you already know this but - you are comparing RGB value on an RGB
display to YUV value on an RGB display. It's normal if they don't match
there. What's important is if the RGB on the RGB (computer) display matches
the YUV on your broadcast monitor. Avid's little window there is showing
you an approximation of the conversion (RGB to YUV to RGB). At least that's
how I see it.
